A Hollywood favorite, Fatburger, has left Texans on edge as plans to open its doors along Interstate 10 in Leon Springs seem to be on the back burner. Despite initial excitement following the August 2025 confirmation of the project, the famed burger chain has yet to bring its juicy patties to the Lone Star State by the start of 2026.

Locals and burger aficionados are left scratching their heads after the closure of one of Fatburger's few San Antonio spots, casting a shadow of uncertainty over the chain's expansion plans in Texas. "We are excited to open in Boerne," Fatburger's Senior Director of Corporate Communications, Erin Mandzik, expressed last year. But as spring rolls in, the site remains eerily dormant, wrapped in signs that have been promising a grand opening for over a year.

The Mystery Behind the Unopened Doors

In 2022, Fatburger's parent company, FAT Brands, announced ambitious plans to plant 80 new locations across Texas. The nearly completed Boerne-area location, nestled beside a bustling Chick-fil-A and Walmart, seemed poised for success. Yet, the 2,423-square-foot property remains unopened, inviting speculation as to why the burger joint hasn't fired up its grills.

The lack of word from Fatburger in response to requests for comment has only deepened the enigma. Those craving an alternative to Whataburger in the Boerne area must continue waiting, as the fate of this Fatburger location hangs in the balance.

A Hollywood Legacy's Bumpy Ride

Fatburger carries a rich legacy dating back to its founding in 1947 by Lovie Yancey, who alongside her husband, sparked a culinary revolution. Known affectionately as "the Last Great Hamburger Stand," Fatburger has long been a staple in LA's celebrity scene, counting legends like Ray Charles and Magic Johnson among its fans.

Though the Boerne project remains stalled, Fatburger continues to operate at its San Pedro Avenue location and within Six Flags Fiesta Texas. Whether this longtime Hollywood staple can find its feet in Texas remains to be seen, but the anticipation continues to build, echoing the whispers of "coming soon" on the horizon.
